We love using berries in summer desserts! Even better, we love to pull out the crockpot and make a 'set it and forget it' recipe. This week we decided to make one of our favorites...berry cobbler! It makes the house smell phenomenal and it's an easy dessert to scoop and serve after dinner that requires very little effort or attention. Check out the recipe below to give it a try!
- 1 1/4 cups flour
- 3/4 cups sugar
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1 egg
- 1/4 cup milk
- 2 tbsp cooking oil
- 1/8 tsp salt
- 4 cups berries (any kind works!)
- In a large bowl, combine and mix 1 cup flour, 2 tbsp sugar, 1 tsp baking powder, and 1/2 tsp cinnamon.
- In a medium bowl, lightly beat the egg
- Add 1/4 cup milk and 2 tbsp cooking oil.
- Pour the wet ingredients into the large bowl and mix to make thick batter.
- Spray crockpot with cooking spray.
- Even coat the crockpot with the batter.
- Using the medium bowl, combine the rest of the flour, sugar, and salt. Mix well.
- Add berries and toss to coat evenly.
- Pour coated berries on top of batter.
- Cover and set crockpot to HIGH for 2 hours. (Check it like a cake: insert a fork or toothpick until it comes out clean. BE WARY and DO NOT BURN.)
- Serve and enjoy!
**Tip: We like to serve it in bowls and add a little milk to them!
