Recipe: Ham and Navy Bean Soup #simplesoup #soupfromleftovers


This week I couldn't pass up the ham shank deal at the local grocery store, but I knew it would mean getting creative so that we would make use of it all. We made a sweet glaze for the ham and roasted it in the oven as usual, but what to do with the meat left on the bone? A friend of ours says it's the best part and it's a must to use it in soup. So...that's just what we did.






Cook Time: Approximately 4 hours

Ingredients:
  • 1 lb of cubed ham pieces
  • 1 cup of navy beans, rinsed and sorted
  • 1 cup of sliced baby carrots
  • 1/4 cup of sliced onions
  • 4 cups of water
  • hambone
  • 1 tbsp dried oregano
  • 2-3 bay leaves
  • 2 tbsp pepper
  • salt to taste
  1. Add all ingredients to crockpot and cook on high for 4 hours or until navy beans and carrots are tender.
  2. Remove bay leaves and hambone.
  3. Serve and enjoy!
