This week I couldn't pass up the ham shank deal at the local grocery store, but I knew it would mean getting creative so that we would make use of it all. We made a sweet glaze for the ham and roasted it in the oven as usual, but what to do with the meat left on the bone? A friend of ours says it's the best part and it's a must to use it in soup. So...that's just what we did.
Cook Time: Approximately 4 hours
Ingredients:
- 1 lb of cubed ham pieces
- 1 cup of navy beans, rinsed and sorted
- 1 cup of sliced baby carrots
- 1/4 cup of sliced onions
- 4 cups of water
- hambone
- 1 tbsp dried oregano
- 2-3 bay leaves
- 2 tbsp pepper
- salt to taste
- Add all ingredients to crockpot and cook on high for 4 hours or until navy beans and carrots are tender.
- Remove bay leaves and hambone.
- Serve and enjoy!
