Easter is just around the corner! One of our favorite family traditions is hosting a special brunch to spend time together and enjoy the holiday. This year, we're taking Easter brunch to a new level with MacKenzie Limited gently smoked salmon with a special hardwood blend. Their large salmon tenderloin is incredibly flavorful, with a hardy portion size that will feed a crowd. It's super tender and so delicious that it's hard not to sneak a few bites here and there as we prepare for our guests! In addition to the taste, one of the best things about having our salmon delivered is the amount of time it saves us. We loved bringing in the box from the front porch and getting right to work on our menu. I've included three of our own meal ideas for you below, but the possibilities are endless with this delicious fillet.

Smoke Salmon Flower on Rye

This recipe can just as easily be adapted to bagels, but we like to use genuine rye toast for the health benefits and dense taste (German rye, not American, they're quite different). It couldn't be simpler, just slice the rye bread in half, toast it,  spread on the avocado mash, top it with an egg sunny-side up, and add the smoked salmon as the petals around the egg center. It's an easy dish that leaves a big impression visually and packs an even bigger taste! 

  • MacKenzie Limited Smoked Salmon Fillet
  • 1 slice of German Rye Bread
  • 1 Egg 
  • 1 Avocado, mashed
  • Salt and pepper to taste

Smoked Salmon Wraps

We love a good wrap for brunch and these smoke salmon wraps are nothing short of amazing. Wraps are so easy to customize and get creative with. For our brunch, we're using whole wheat wraps, spreading half of the wrap with roasted red pepper hummus and the other half with Tzatziki sauce. We added baby spinach, sliced cucumbers, diced tomatoes, capers and salmon, with a little squeeze of lemon. Roll them up and slice in half...they're ready to go!

  • whole wheat wraps
  • 2 cups of baby spinachone cucumber, peeled and sliced
  • 1 cup of cherry tomatoes, diced
  • 2 tbsp of roasted red pepper hummus
  • 2 tbsp of Tzatziki sauce
  • 2 tsp of capers
  • 1 lemon slice

Smoked Salmon Salad

This salad is about as springtime as it gets! We chose baby spinach as our base, but there are so many ways your can put your own spin on it.  Add in sliced cherry tomatos, walnuts, marinated artichokes, red onion, feta cheese and a sprinkle of dill. Top it off with slices of MacKenzie Limited Smoke Salmon and avocado and you're all set to serve! We chose a lemon vinaigrette for the dressing and it really paired nicely with the salmon. While I like to make individual salads for our guests, a large family-style salad bowl works just as well!

  • 1/2 cup walnuts
  • 1/4 cup red onion
  • 1/4 cup feta cheese
  • 2 tbsp dill weed
  • dressing of your choice (We like lemon-based dressings!)
