Recipe: Carrot & Oatmeal Cookies #healthycookie


When we end up with spare carrots hanging out in the fridge, we like to incorporate them into a healthy snack. One of our favorites is a little unusual, but they always seem to go fast each time we make them..carrot & oatmeal cookies! Sometimes we add a little more cinnamon, nutmeg, and sugar to sweeten them up, but this time around, we wanted simple healthy goodness. Check out the recipe below!

Ingredients:

  • 1 small to medium carrot, peeled and grated (3/4 cup grated carrot)
  • 1 cup oatmeal
  • ¾ cup flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp cinnamon
  • 1/8 tsp salt
  • 2 tbsp butter, melted
  • 1 egg
  • 1 tsp vanilla extract
  • ½ cup maple syrup

Directions:

1. Mix the flour, oatmeal, baking powder, cinnamon, and salt together in a medium bowl. 

2. Whisk the butter, egg, and vanilla together in a bigger bowl. 
Note: a cold egg right from the fridge will cause the butter to clump. Let it warm to room temperature while you assemble everything.

3. Mix in the maple syrup evenly.

4. Add in the dry mixed ingredients to the wet bowl and stir evenly.

5. Fold in the grated carrots.

6. Set the cookie dough in the fridge for 30 minutes.

7. Preheat over to 325 Fahrenheit.

8. Scoop out the cookie dough onto a baking sheet and bake for 15 minutes.

9. Let cool, serve and enjoy a healthy snack.
