Recipe: Chicken Salad Sandwich Sliders #NOMAYO

In an effort to create healthier meals, we try to substitute Greek yogurt for mayo and sour cream anywhere we can. This time around, we've created delicious chicken salad sandwich sliders with Greek yogurt instead of mayo. Personally, I think it taste a thousand times better and the healthy factor is just an added bonus! Here's what we did:

Time: 10 minutes
Ingredients:
  • 1 lb of chicken breast, shredded
  • 1/2 cup Greek yogurt
  • 1/2 cup chopped pear (apples, if prefered)
  • 1/2 cup sliced onion
  • 1/3 cup dried cranberries
  • 1/3 cup sliced almonds
  • salt to taste
  • pepper to taste

  1. Add all ingredients in a large bowl and mix well.
  2. Place in the refrigerator to chill for 30 minutes.
  3. Serve on desired bread or roll. Enjoy!

  1. This sounds really good! LOL - my pretzel sandwiches seem so boring compared to this. I was cutting up string cheese and melting it on pretzel rolls or doing ham & cheese. I'm looking forward to trying this, probably with chopped apples.

  2. This looks really good! Does the 1/2 cup of yogurt make it a really moist chicken salad?

  3. The 1/2 cup makes it moist enough without tasting too much like yogurt. We used more the first time and it was just too heavy.

  4. Yep, I tried it with just the 1/2 cup and it was perfect. Any more woulda been too much. Thanks!

  6. I like that this doesn't have mayo. I will have to give this a try because my daughter doesn't do mayo, but she would like these
