Recipe: Mud-pie Trifle #DecadenceOnaDiet








This year's holiday celebration theme is 'Decadence on a Diet'. What's a holiday dessert without the chocolate? We decided to try an easy mud-pie trifle using low-cal or fat-free ingredients where we could. We completed our trial run this weekend and our family gave it a two thumbs up. As you can see, we're going to need to practice our layering skills more, but that's what trial runs are for, right? The dessert definitely tastes better fresh, rather than placing it in the fridge to cool first, so we recommend making it the day of your party, rather than the night before. Check out the recipe below. It's super easy to make!












Low-Cal Mud-pie Trifle
Time: 1 hour
Ingredients:
  • 1 box of fat-free or reduced fat brownie mix
  • 1 container of fat-free or reduced fat cream cheese icing
  • 1 can of diet Coke
  • 1 container of fat-free whipped topping
  • cooking spray
  1. In a large bowl, pour in the brownie mix and diet Coke. (Do not add any other ingredients, just the powdered mix.) Mix well. 
  2. Lightly coat your brownie pan with cooking spray and pour in the batter. Bake according to the directions on the box, adding an additional 10-15 minutes of cooking time.
  3. Remove brownies from oven and allow to cool.
  4. Scoop out brownies and place in KitchenAid mixer (or large bowl) along with the cream cheese icing. Mix together until a crumbled even consistency is reached. (It will look much like dirt cake.)
  5. In individual glasses, begin layering the brownie mixture with the whipped topping, until you reach the top of the glass. Finish the top layer with whipped topping.
  6. Serve and enjoy!

  1. I've never tried a recipe with Diet Coke as an ingredient. I'm intrigued! This looks really good, especially when you add cream cheese frosting.
