In an effort to keep our healthy eating goals going, my husband and I tried a little breakfast challenge. We decided to give Bob's Red Mill Organic Pancake and Waffle Whole Grain Mixa try since we loved the Muesli that they make. We have always used regular buttermilk pancake mixes in the past, but since we are actively trying to eat healthier, those don't make our grocery list anymore.
After following their instructions of 1 cup of mix, 2 eggs, 2 tbsp. of oil, and 3/4 cup of milk, we threw the batter into our waffle iron and waited for our taste test to begin! One immediate difference that we noticed was that the batter was lighter and didn't seem like as much of a portion size as we usually use to make breakfast. The batter made about 3 waffles, which we were skeptical would fill us. Turns out, we were wrong. After one waffle, which had a noticeable, delicious whole grain taste, I was feeling pretty stuffed! My husband ate the other two and had the same reaction. We've immediately noticed that the whole grain product switches we've been making are satisfying us a lot more quickly than our old choices, which contain a lot of enriched flour and preservatives. It's a lot easier to gain control of portion sizes when you feel genuinely full! I can't wait to see how it turns out as pancakes. So far our healthy eating challenge has been delicious and fun!
